Protein digestion in poultry begins in the proventriculus, where the environment is highly acidic (pH 2.5–3.0), and continues into the duodenum with a near-neutral pH (6.0–6.8). However, natural enzymes alone often fall short in completely digesting feed proteins.
Proease bridges this gap by cleaving peptide bonds more extensively than native enzymes. It demonstrates strong proteolytic activity across various protein substrates, esters, and amides — facilitating thorough hydrolysis even in challenging pH conditions.
